Mango Chutney Pizza

Serves 4-6

1                    thin pizza crust*

2                    Tbsp Himalaya Gourmet Mango Chutney

˝cup   Feta, Goat or any Cheese

2         Tbsp Butter

 

Directions:  Preheat oven to 450 F.  Butter the crusts. Spread mango chutney

evenly over the crust placed in a baking tray. Sprinkle cheese over the entire top of the pizza. 

Bake 8-10 minutes until cheese is melted. Cut in wedges & serve.

 

*Use store bought crust, flat bread or use a pitta or nan bread

 cut in half with a sharp knife to keep it round.

 

Mulligatawny soup      

6 servings                                              

Ingredients:                                                                                 

1 onion diced;1 carrot, grated.

2 tablespoons butter.

1 tablespoon, Himalaya Gourmet Curry Masala

6 cups stock (chicken, meat or vegetable.)

2 tablespoons, Himalaya Gourmet Mango chutney.

2 tablespoons flour.

Garnish: 1 cup, cauliflower florets. 

Method:  Brown onions in butter, add grated carrot and H.G curry masala. Continue to cook.  Add flour stirring well at the same time.  Add Himalaya Gourmet mango chutney, and then the stock in small quantities, stirring all the time, not to get the soup lumpy.  Cook for 15 minutes. Add garnish and cook for 3 minutes.  Add salt and pepper to taste.  Serve hot.                                                                                                                                      

Summer salad.

This dressing was served at a church function in St Lambert Qc.

Dressing made with Himalaya Gourmet Mango Chutney.

You could make your own favourite salad combinations.

Mango Chutney dressing:  Whisk together in a jar, 2 tbsp cider vinegar; 3 tbsp Himalaya Gourmet Mango Chutney; two tbsp honey; 2 tbsp olive oil.  salt and pepper; 2tbsp hot water.

Mixed Greens:

In a bowl, combine a quarter of sliced medium onion;1 avocado, peeled and chopped; 4 cups (1 L) salad; 12 cherry tomatoes, in halves;                            

Toss with Himalaya Gourmet Mango dressing.                                                       

Makes 4 side-dish servings. Or top with grilled chicken strips to make two meals.

 

Crunchy Salad

4 cups red leaf salad;

8 Cherry tomatoes, diced;                                                                                    4 oz (125 g) cold cheese, cubed;1/2 cup toasted pecans;

15 pitted black olives.

1/4 a stick cucumber, diced.

Toss salad with Himalaya Mango Dressing and serve.

For a quick meal top with grilled salmon,

chicken or turkey strips.

This spring grow a couple of cherry tomato plants in a pot, placed in a sunny spot. You will enjoy salads in summer right up to mid November. Just eight cherries improve the look and taste of any salad. Your family will be impressed.
